Method
- Prepare the fruit: Cut the watermelon into bite-sized cubes.

- Create a watermelon cube by removing rind and green part.

- Cut the watermelon cube into bite size cubes.

- Prepare the apricots and kiwis. Rinse and gently pat dry the raspberries.

- Make the dressing: In a small bowl, whisk together the yogurt, honey, lemon juice, lemon zest, and vanilla extract until smooth and creamy.

- Garnish: Scatter fresh mint leaves over the top for color and a refreshing finish.

- Add the dressing: Drizzle the creamy dressing over the fruit just before serving. Gently toss to combine, or serve with the dressing on the side. Serve immediately. (It is delicious when served with vanilla Italian Pizzelle waffles.)
