Ingredients
  

  • 1 11-inch Ultra-thin pizza crust I used Handcrafted Golden Home Roman Pizzeria Style pizza crust
  • 1 purple onion, sliced
  • 1 1 leek top, sliced into 1/4-inch rings
  • 1 cup cup fresh broccoli florets
  • 1/2 bell pepper, sliced orange or red
  • 1/4 cup tomato paste
  • 1/2 hot Hungarian Gipsy pepper, thinly sliced (optional)
  • 12 dark pitted Kalamata olives, sliced
  • 10 oz grated Bulgarian Kashkaval sheep cheese (or your favorite aged cheese)
  • 1 tbsp olive oil extra virgin
  • 2 tbsp crushed red pepper flakes

Method
 

  1. Prep the Ingredients: Slice vegetables and grate cheese.

  2. Brush a nonstick pan with olive oil, then place peppers, broccoli, and leeks in a single layer. Roast at 400ºF for 5 minutes on each side, gently flipping them halfway through.
  3. Assemble the Pizza: Spread tomato paste evenly on the pizza crust. Arrange the roasted vegetables on top, then olives, onions, and hot peppers (if using). Sprinkle with grated cheese.
  4. Preheat your oven to 420ºF and bake the assembled pizza for 10-12 minutes or until the crust turns golden and crispy and the cheese melts to ooey-gooey perfection.
    Finishing Touches: Once out of the oven, sprinkle crushed red pepper flakes for a spicy kick that elevates the flavors to another level.
