  • 3-4 orange or red sweet mini peppers, finely chopped
  • 1 onion, finely diced
  • 4 green onions, thinly sliced
  • 4 small pickles, finely chopped
  • 2 stalks of celery, including leaves, finely chopped
  • 3 tbsp organic Dijon mustard
  • 3 tbsp organic mayonnaise
  • 2 hard-boiled eggs, chopped
  • Salt and pepper to taste
  • Dash of hot paprika or cayenne pepper optional
  • 3-4 red radishes
  • 12-14 endive leaves for serving
  • 3-4 green onions, dill, parsley, or fennel sprigs for decoration

Method
 

  1. Prepare ingredients.
