- Open the jar of fire-roasted eggplant and transfer the contents to a large mixing bowl.Add the Kevala Organic Sesame Tahini, finely chopped garlic cloves, and fresh lime or lemon juice to the bowl.

- Mix well until all ingredients are thoroughly combined and the mixture is smooth and creamy. If you prefer a creamier consistency, use a mixer for this step. (I like more texture for this dish so I hand mix with a spoon.)Season with salt and freshly ground pepper to taste. If desired, add finely chopped red chilies or Serrano pepper for a bit of heat.

- Serving:Transfer the Baba Ghanoush to a serving platter or bowl.

- Drizzle the top with organic pumpkin oil and sprinkle with organic roasted and salted sunflower kernels.Arrange pitted Kalamata olives, halved cherry tomatoes, extra fine cornichons, and fresh chives, mint, parsley, dill, and lettuce around the dip for a vibrant and appetizing presentation.Serve with toasted pita chips or wedges for dipping.Get ready to savor each bite of this truly eclectic dish!
