- Prepare the ingredients.

Drain, cover and set aside.Prepare the sauce: While the pasta cooks, heat olive oil in a large skillet over low heat. Add minced garlic, sliced mushrooms, and sweet peppers, and sauté until golden, about 15 minutes.
- Add remaining ingredients: Stir in vegetable broth, dill, salt, pepper, and cayenne pepper (if using). Add the vegan mayonnaise, stirring gently until combined. Cook for several additional minutes.

- Wilt the spinach: Turn off the heat and add the spinach. Cover the skillet and let the spinach wilt for a few minutes.

- Combine pasta and sauce: Add the drained pasta to the skillet, tossing until well coated. Let the pasta rest on the heat for 5 minutes to absorb the flavors.Serve: Garnish with fresh cherry tomatoes and chopped parsley or cilantro. If not strictly vegan, you can also add a sprinkle of Parmesan or Romano cheese for extra flavor.
