Ingredients
  

  • 8 oz fusilli pasta
  • 3 tbsp olive oil extra virgin
  • 1 red sweet mini pepper, sliced
  • 1 yellow sweet mini pepper, sliced
  • 2-3 garlic cloves, minced
  • 8-10 mushrooms, sliced
  • 1 cup cup fresh baby spinach leaves
  • 8-10 jarred green olives, sliced
  • 1 tbsp chopped fresh parsley or cilantro
  • 1/4 cup vegetable broth or water
  • 1/2 cup vegan mayonnaise
  • 1 tbsp nutritional yeast (optional)
  • 1 cup grape tomatoes, halved
  • 1 tbsp dried or fresh chopped dill
  • Pinch of cayenne pepper (optional)
  • dash of celery salt
  • Salt and pepper to taste

Method
 

  1. Prepare the ingredients.
  2. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain, cover and set aside.
    Prepare the sauce: While the pasta cooks, heat olive oil in a large skillet over low heat. Add minced garlic, sliced mushrooms, and sweet peppers, and sauté until golden, about 15 minutes.
  3. Add remaining ingredients: Stir in vegetable broth, dill, salt, pepper, and cayenne pepper (if using). Add the vegan mayonnaise, stirring gently until combined. Cook for several additional minutes.
  4. Wilt the spinach: Turn off the heat and add the spinach. Cover the skillet and let the spinach wilt for a few minutes.

  5. Combine pasta and sauce: Add the drained pasta to the skillet, tossing until well coated. Let the pasta rest on the heat for 5 minutes to absorb the flavors.
    Serve: Garnish with fresh cherry tomatoes and chopped parsley or cilantro. If not strictly vegan, you can also add a sprinkle of Parmesan or Romano cheese for extra flavor.

• For the best results, use high-quality, organic ingredients. I recommend Saro Taormina organic fusilli, made from high-quality durum wheat and pure spring water.
