Ingredients
  

  • 7 large mushrooms, quartered
  • 6 cloves garlic, slivered
  • 1 carrot, sliced
  • 2 leaves of green onions or scallions, chopped
  • 1 tbsp fresh thyme
  • 1 hot pepper, finely sliced (or to taste)
  • 1 cup white wine
  • 1 tbsp olive oil extra virgin
  • Salt and pepper to taste

Method
 

  1. Prepare the ingredients
    Sliced mushrooms, garlic and carrots
  2. Heat the olive oil in a large skillet over medium heat.
    Add the quartered mushrooms to the skillet.
    Sauté for about 10 minutes, stirring occasionally, until the mushrooms are slightly browned and golden.
    Add the sliced carrots to the skillet.
    Sauté for about 2 minutes, stirring frequently, until the carrots soften.
    Add the slivered garlic to the skillet.
    Stir well and sauté for another 2 minutes, allowing the garlic to become fragrant and slightly golden.

  3. Deglaze with Wine:
    Pour in the white wine.
    Let the mixture simmer, stirring occasionally, until the wine reduces by half, about 5 minutes.
    Season and Cook:
    Add the finely sliced hot pepper and fresh thyme.
    Season with salt and pepper to taste.
    Stir well and cook for another 2-3 minutes until all the flavors are well combined and the wine almost evaporates.

  4. Garnish and Serve:
    Remove the skillet from heat.
    Garnish with chopped green onion leaves.
    Serve warm as a flavorful side dish.
