Golden Summer Tiramisu with Peaches, Apricots & Orange Liqueur

This Golden Summer Tiramisu is a light, no-bake dessert layered with peaches, apricots, and a silky ricotta cream. Ladyfingers soaked in a fragrant orange liqueur syrup create the perfect base, while fresh fruit adds a refreshing twist on the classic Italian treat. Elegant yet effortless, it’s an ideal make-ahead dessert for summer gatherings.

Ingredients
  

  • For the syrup:
  • 1/2 cup dry white wine
  • 1/2 cup granulated sugar
  • 1/4 cup orange liqueur Grand Marnier recommended
  • 1/2 tsp vanilla extract 'Simply Organic' Pure Madagascar vanilla recommended
  • For the cake:
  • 4 large ripe peaches, halved, pitted, and sliced (1/2 inch thick)
  • 4 medium apricots, halved, pitted, and sliced (1/2 inch thick)
  • 1 1/2 cup  heavy whipping cream
  • 4 tbsp powdered sugar
  • 1 cup crème fraîche (or sour cream as a substitute)
  • 15 oz ricotta cheese (or mascarpone for a richer option)
  • 1/2 cup orange marmalade fruit spread 365 Organic Orange Marmalade fruit spread recommended
  • 1/2 tsp vanilla extract
  • 24 ladyfingers (about 1 package)
  • For garnish (optional):
  • Fresh mint leaves
  • Sliced or slivered almonds (blanched or roasted)

Method
 

  1. Prepare the fruits: Peaches and apricots should be halved, pitted, and cut into 1/2 inch slices.
    Place them into a bowl. Add orange marmalade and toss to coat. Set aside.

  3. Prepare the syrup:In a small saucepan, combine white wine and sugar.Bring to a gentle simmer and stir until the sugar dissolves.Remove from heat, stir in orange liqueur and vanilla. Let cool completely.
    Make the cream:In a large bowl, whip heavy cream with powdered sugar until soft peaks form.In another bowl, whisk together crème fraîche, ricotta, and vanilla until smooth.Fold whipped cream gently into the ricotta mixture until combined and fluffy.
    Assemble the tiramisu:Quickly dip ladyfingers into the cooled syrup and arrange in a single layer in a deep 9x9-inch dish.Spread one-half of the cream mixture over the ladyfingers.Add a layer of peaches and apricots.Repeat with one more layer, finishing with cream on top.
    Chill and serve:Cover and refrigerate for at least 4 hours or overnight.Before serving, garnish with mint leaves and almonds.

Notes

Tips & Variations
  • Swap peaches or apricots with nectarines, plums, or even mango for a tropical twist.
  • For a nutty note, add a drop of almond extract to the cream.
  • Use mascarpone in place of ricotta for a richer, more traditional texture.
