Ingredients
  

  • 3-4 tbsp olive oil extra virgin
  • 2 carrots
  • 3 potatoes
  • 3 large white or Bella mushrooms quartered
  • 1 parsnip root
  • 1 medium onion
  • 1 cup cup feta cheese cut into 3/4 inch pieces
  • 1 bell pepper
  • 1 beet, sliced
  • lemon juice to taste
  • sprigs of fresh parsley and mint
  • salt and pepper to taste
  • 1 cup Greek yogurt for dip
  • 1 small beetroot precooked for 20 minutes for dip
  • 2 cloves garlic, minced or smashed for dip

Method
 

  1. Slice your chosen vegetables into even pieces to ensure they cook uniformly. Toss them in olive oil, salt, and pepper. You can add your favorite Mediterranean dry herbs, such as rosemary, thyme, and oregano, but this is optional.
  2. Preheat your grill to medium-high heat and place the vegetables directly on the grates, or use a grill basket to prevent smaller pieces from falling through. If you're using a grill basket, make sure to toss the vegetables occasionally for even cooking.
    Grill the vegetables for about 10-15 minutes, turning occasionally until they are tender and have those beautiful grill marks.
  3. To make the beet tzatziki: Combine cubed, precooked beets, Greek yogurt, minced garlic, lemon juice, and a pinch of salt in a bowl.
  4. Pulse them in a mixer for several seconds until smooth.
    Refrigerate for at least 30 minutes to allow the flavors to meld.
