  • 1 bell pepper
  • 1 beet, sliced
  • lemon juice to taste
  • sprigs of fresh parsley and mint
  • salt and pepper to taste
  • 1 cup Greek yogurt for dip
  • 1 small beetroot precooked for 20 minutes for dip
  • 2 cloves garlic, minced or smashed for dip

Instructions
 

  • Slice your chosen vegetables into even pieces to ensure they cook uniformly. Toss them in olive oil, salt, and pepper. You can add your favorite Mediterranean dry herbs, such as rosemary, thyme, and oregano, but this is optional.
