Ingredients
  

  • 1 cassava (yuca) flatbread (cut into 4 triangles, pre-baked)
  • 2 medium organic onions, thinly sliced (add an extra if desired)
  • 2 ripe organic tomatoes, sliced into wedges (add an extra if desired)
  • 1/2 cup Kalamata olives, pitted and halved
  • 4 oz blue cheese (crumbled or cubbed into small pieces)
  • 2 tbsp  olive oil - extra virgin
  • Fresh herbs for garnish (mint, parsley, or chives)
  • Salt and black pepper, to taste

Method
 

  1. Prepare the ingredients
  2. Chop the vegetables and herbs
    Chopped onions, blue cheese, tomatoes, and olives
  3. Caramelize OnionsSlice onions thinly and sauté in a wide pan with olive oil over medium-low heat. Cook slowly, stirring often, until caramelized and golden brown (about 20–25 minutes). Season lightly with salt and pepper.
  4. Assemble the PizzaPlace cassava flatbreads on a baking sheet. Spread the caramelized onions evenly over the base. Top with tomato wedges, olives, and crumbled blue cheese.
    BakeBake in a preheated oven at 375°F (190°C) for about 10–12 minutes, until the cheese melts and the edges are crisp.
    Garnish & ServeRemove from oven, sprinkle with fresh herbs, and slice into wedges. Serve warm.
