Method
- Remove leaves and wash beets. Cook them in salted water for 1 hour and let them cool. Cut off ends, peel skins, and slice or chop each root.

- Cube cooked beets, chop onion and garlic, prepare spices.

- Divide beets, kefir, and coconut water into 3 batches and blend in a blender on the soup setting. The first batch can include all of the spices and sugar.

- Mix everything in a large bowl and serve chilled or at room temperature. If you are using kefir, pour some over the top. Garnish with fresh herbs of your choice, and add a swirl of kefir when serving.
Notes
Every time I make cream soups, I alter the recipe slightly, depending on the ingredients. Feel free to adapt to your personal taste. Adjust spices and the final thickness to your liking. Enjoy!
