Spicy COLD CREAM of BEET SOUP with KEFIR Simple & Perfect
Cream of beet soup is delicious any time of year, but a fresh harvest of tender roots always tastes perfect on summer days. This easy recipe can be learned by heart, and it takes minutes to make, provided that you cooked the beets the night before. (As with many of my recipes, a vegan version can be created by substituting kefir with coconut milk.) Remember to decorate with the green garnish of fresh herbs! Mint is my favorite, but a touch of finely chopped rosemary will add an additional layer of earthy aroma that combines so well with a whisper of coconut.
Spicy COLD CREAM of BEET SOUP with KEFIR Simlple & Perfect

This recipe is not just delicious—it's also incredibly easy to master. In just a few minutes, you'll have a vibrant soup ready to serve and impress your loved ones.
Ingredients
- 10-12 medium beets cooked
- 1 small onion sliced
- 2-3 garlic cloves
- 1/4 cup olive oil extra virgin
- 2 tbsp raw cane sugar
- 3 cups coconut water
- 3 cups kefir or plain yogurt
- 1/2 tsp each powdered cloves, turmeric, ginger, and coriander
- salt and pepper to taste
Instructions
- Remove leaves and wash beets. Cook them in salted water for 1 hour and let them cool. Cut off ends, peel skins, and slice or chop each root.
- Cube cooked beets, chop onion and garlic, prepare spices.
- Divide beets, kefir, and coconut water into 3 batches and blend in a blender on the soup setting. The first batch can include all of the spices and sugar.
- Mix everything in a large bowl and serve chilled or at room temperature. If you are using kefir, pour some over the top. Garnish with fresh herbs of your choice, and add a swirl of kefir when serving.
Notes
Every time I make cream soups, I alter the recipe slightly, depending on the ingredients. Feel free to adapt to your personal taste. Adjust spices and the final thickness to your liking. Enjoy!
