Ingredients
  

  • Several leaves of green and purple lettuce
  • 6-8 sorrel leaves
  • 4-5 leaves of fresh basil
  • Handful of fresh dill
  • Handful of cilantro with flowers
  • Handful of chervil
  • 4-6 Fresh oregano leaves
  • 1/2 cup Fresh thyme leaves with flowers
  • 6 nasturtium flowers with stems and leaves
  • Sprigs of chives and chive flowers
  • Sprigs of green garlic leaves
  • Dressing:
  • 1/2 cup extra virgin olive oil
  • 1/2 cup tart cherry juice
  • 1 tsp fresh rosemary, chopped
  • Salt and freshly ground pepper to taste

Method
 

  1. Gather your ingredients.
  2. Wash and trim fresh herbs and flowers.

  3. Do not chop or tear the fresh leaves. Wash them quickly and dry them gently with a paper towel. Cut chives and green garlic into 3-4 inch pieces. Separate nasturtium leaves from flowers and leave them whole.
  4. Make the dressing. Use one half and refrigerate the rest for future use.
    Toss the salad until the leaves are uniformly coated with the dressing.
    Taste the salad and adjust by adding more salt, cherry juice, or oil if necessary. The final
    salad should have a balance of crispness, acidity, and a hint of saltiness.
