Mediterranean Pizza with Eggplants and Leeks
Ingredients
- 1 11 inches Ultra thin pizza crust
- 1 small onion, purple or white, sliced or chopped
- 1 leek top thinly sliced
- 2-3 medium mushrooms sliced
- 1/2 small eggplant sliced in thin rounds
- 1/4 cup tomato paste
- 1/2 red Serrano pepper
- 12 dark pitted Kalamata olives sliced or cut in half vertically
- 10 oz feta cut into 3/4 inch pieces or crumbled
- 1 tbsp olive oil
Instructions
- Preheat your oven to 420ºF (215ºC).
- Slice your vegetables and cheese. Brush the bottom of a nonstick skillet with olive oil and arrange thin slices of eggplant in a single layer. After 30 seconds, gently flip them with tongs and then turn off the heat.
- Spread tomato paste evenly on the pizza crust.Arrange the cooked eggplant slices and mushrooms on the crust, followed by olives. Top with onions, leeks, red Serrano pepper slices, and feta cheese.
- Bake your pizza in the preheated oven for 10-12 minutes or until the crust turns golden and crispy. Slice, serve, and savor every Mediterranean-inspired bite!

If you prefer slightly brown edges on feta cheese, leave the pizza in the oven for several minutes, watching carefully so that the crust is not burned. You can also crumble the cheese for a more melted consistency. As always, for best results, I suggest organic ingredients.
