- 2 lbs pitted fresh (or bottled) cherries or Morello cherries in light syrup, see Notes
- 2 cups coconut milk
- 13.5 oz can of coconut cream I use 'Let's do Organic' Organic Coconut Cream
- 2 tbsp raw cane sugar (Turbinado)
- Pinch of salt
- Pinch of cinnamon (optional)
- Fresh mint leaves and pitted cherries for garnish

- Prepare Ingredients: Start by pitting the cherries if they aren't already pitted. This step is crucial for achieving a smooth texture in your soup.
- Blend Ingredients: In a blender, combine the pitted cherries, coconut milk, coconut cream, raw cane sugar, a pinch of salt, and optional cinnamon. Blend until smooth and creamy. (Leave some unprocessed cherries for serving.)
