Ingredients
- 1 1/2 cups heavy cream or half-and-half
- 3.5 oz dark cooking chocolate I use Absolute Black With Cocoa Nibs
- 4 tbsp butter
- 4 tbsp powdered sugar
- 1 tsp pure Madagascar vanilla extract
- 9 oz Organic Vanilla Wafers I use Whole Foods Market, Organic Vanilla Wafers, 9 Ounce package, but Petit-Beurre biscuits or crackers of your choice are great too
- 2 tbsp tbsp honey or Nutella
- Coatings and Fillings: Ground nuts and coconut for rolling:
• 1 cup coconut flakes
• 1 cup roasted walnuts
• 1 cup roasted hazelnuts
• 1 cup roasted pistachios
• 1 cup roasted cashews
• 1 cup honey-roasted peanuts
- Optional fillings: • Whole roasted nuts (set aside for center filling)
• Chopped dried mango
• Chopped candied ginger
• Dried cherries
• Other dried fruits of choice
Instructions
- Prepare the ingredients:Place the wafers in a large plastic bag and crush them with a rolling pin until finely ground.Grind the nuts separately according to type and set them aside.Prepare coconut flakes and dried fruits. If using dried mango or ginger, chop them into small pieces. Soak them in warm water for 5 minutes for a softer texture, then pat dry with a paper towel.
- Melt the chocolate mixture:In a small saucepan, melt the chocolate and butter with the cream over low heat, stirring until smooth.Remove from heat and let it cool for 10 minutes.
